Almost every day of my residency I would steal away to a local restuarant called THIRSTY MERMAID for a salad and glass of wine.

While every meal was delightful, I took the most delight in watching the proprietor of the cafe look upon his work with pride - taking in every detail of his team's excellent dance with watchlike precision - and just as happy to greet patrons, build the next day's menu, or bus a table.

I never talked with him and somehow appreciate the experience more for it.
